- 2 medium leeks, cut lengthwise, sliced, and rinsed to remove soil and sand, drain. 
- 1 small shallot, peeled and minced 
- 2 tablespoons olive oil 
- 5 oz goat cheese, crumbled and divided in half 
- 2 large whole eggs 
- 2 egg yolks 
- 1 cup heavy cream 
- 1 cup milk 
- 1 tablespoon mix of fresh thyme, parsley, and marjoram (or choice of herbs), minced 
- pinch fresh ground nutmeg 
- Salt and pepper to taste 
- Fresh herbs for garnish (optional) 
Step-by-Step Instructions
Step 1: Make the Pastry
Start by preparing the pastry. In a large mixing bowl, combine the flour, baking powder, and salt. Cut in the cold, diced butter until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, kneading until the dough is just combined.

Once the dough is ready, wrap it in beeswax wrap (wax paper, or plastic wrap will also work) and refrigerate for about 30 minutes. This step is crucial as it helps the butter solidify and the gluten to relax, resulting in a flaky crust.

Line with parchment paper and pie weights. I use rice, and I have been using the same rice for 5 years now. I store it in a container marked DO NOT EAT, and it is easy to get up on the sides and does not leave the indents like beans do.

Preheat your oven to 375°F (190°C). Bake the tart crust for 10 minutes. Remove from oven, remove parchment and pie weights (rice), and return to oven for another 5 minutes, or until crust begins to brown.

Pour the filling into the pre-baked tart shell and spread it out evenly. Dot the remaining crumbles of goat cheese on top. Bake for 35-45 minutes, or until the filling is set, and the top is beginning to color. Leave in longer if you want a more golden color. I prefer a light color for this dish. I find leaving it in longer make it too stiff for my tastes. But the beauty of this dish is you have options.
