About the Recipe
This was Janel's challenge for the recipe showdown. Lauren gave her a real winner here. This was featured on episode 2 of the Two Many Cooks in the Kitchen podcast for the showdown portion.
This looks great in the half orange cups, but you could also make them in ramekins and skip the labor of digging out the cups. Either way, a real winner for a dinner party.

Ingredients
Panna Cotta
4 Blood oranges
16 ounces of Full fat organic coconut milk
1/3 cup Granulated sugar
1/2 tsp Orange extract
2 tsp Gelatin powder
2 TBSP Water
Orange Jelly
3/4 cup Fresh squeezed blood orange juice, from step 1.
2 TBSP Granulated sugar
1 tsp Gelatin powder
1 TBSP Water
Blood orange supremes, broken into small pieces, from step 1
Preparation
Begin by cutting 3 blood oranges in half and scooping out the flesh. Juice the flesh and reserve for the orange jelly. Arrange orange halves on a pan using a towel to stabilize and prevent tipping.
Zest the remaining orange and then cut away the rind and cut out the flesh from between the pith, this is known as supreming. Dice the orange sections and save for the orange jelly.
In a small sauce pan combine the coconut milk and sugar over low heat until the sugar is dissolved, do not boil. Meanwhile, bloom the gelatin by sprinkling over the water.
Once the sugar has dissolved add orange extract, zest, and gelatin. Stir to combine until the gelatin is fully incorporated. Pour into a measuring cup.
Carefully pour the coconut milk mixture into the orange halves being mindful to leave about half a centimeter of space for the orange jelly.
Transfer to the fridge and allow to set for an hour or two. Will take 3-4 hours to fully set.
Once you are able to touch the panna cotta without breaking through the top you can begin the orange jelly.
In a small saucepan combine the blood orange juice and the sugar. Over low heat dissolve the sugar. While this is heating, bloom the gelatin by sprinkling over the water.
Once sugar has dissolved, remove from heat and mix in the gelatin until fully incorporated.
Pour in the orange supreme pieces and stir to combine being careful not to smoosh the pieces.
Remove panna cotta from fridge and top with the orange jelly until it is level with the edge of the orange halve.
Return to the fridge and allow to finish setting for another hour or so.
